There are all sorts of ways to make Cafe de Olla, but after <extensive> experimentation in the kitchen, this one is by far my fave.
Cafe de Olla, or "coffee from a pot", is a spiced, sweet, cinnamony, delicious coffee, traditionally made in a large clay pot. If you have one of those around - great - but let's just use a regular saucepan. They're less hefty.
In your saucepan, add one can of evaporated milk, 4 cups of water, a few good shakes cinnamon, a small pinch of clove, and one small cone of piloncillo, which you can find in the Mexican food section of your grocery store, or at any Mexican market. It's a brown sugar that you can add to your coffee, and tons of sauces!
While that's simmering, and melting the piloncillo, make your coffee however you regularly make it. But here's the key - choose the right coffee.
This Mexican Chocolate coffee will ROCK this recipe's world, and make an excellent Cafe de Olla, but you can also experiment with this coffee from Chiapas, Mexico.
Pour in your coffee and let the pot simmer for around 15 minutes, whisking frequently.
Top with a cinnamon stick for dramatic effect and enjoy!
